Ingredients
- 10 lbs potatoes yukon gold
- 6 cups mayonnaise
- 2 cups parsley chopped
- 1/2 cup salt
- 1/4 cup pepper white, ground
- 1 cup green onions chopped
- 0.5 cup parsley chopped
- 1.5 cups water

Boil
- Boil potatoes skin-on. When done, drain. Cool for 1 hour.
Mix
- Mix potatoes with green onions, parsley, salt and pepper. Add mayo and mix. Adjust creaminess with water.
