Instructions
Boil
- Boil potatoes. Drain. Let cool. Peel. Dice.
Dice
- Dice bacon. Dice onion.
Cook
- Cook bacon until crisp. Add onions and cook until tender. Add diced potatoes and mix. Season with salt/pepper. Cool in fine mesh strainer. Store in fridge.
Assembly
- Farmer's Breakfast: Melt 1 tsp. butter in pan. Heat desired amount of Farmer's Mix with chopped green onions and parsley in pan until hot. Add 4 eggs - scramble in pan. Form into omelette and serve with toast.
